Raw soups take minutes to make and don't require any special ingredients. You can make them up from whatever you have in your fridge!! They are a staple in my diet. They only require a blender.
I brought a raw broccoli soup to the meet-up. It offers plenty of protein by using nuts and avocado. Here is the recipe: 3 cups water 1 cup almonds (or cashews for a smoother texture) 1 teaspoon honey (raw agave syrup may work nice too) 2 cups broccoli 1 avocado 1 clove garlic 1 Tablespoon olive oil 1 teaspoon onion 1 teaspoon sea salt 1 teaspoon cumin (I used more... the cumin makes the soup! don't leave it out!) 1/8 teaspoon black pepper 1. In a blender blend water, almonds and honey until smooth. 2. Add in the rest of the ingredients and blend until creamy. (Add the avocado last and don't blend it too long) Note: Add more sea salt if this tastes bland. I like to add kelp or dulse flakes on top, nutritional yeast and/or hemp powder... which I add to all my dishes. ~~~~~~~~~~~~~~~~~ Here is another broccoli soup that looks good. I found it on the internet: purified water 1 bunch of broccoli (chopped) 1 cucumber 1 lg. avocado or 2 sm. the juice from 2 lemons 1clove of garlic braggs to taste 1/4th c. of cilantro 1/4 c. of fresh parsley Add water to the blender with: cucumber and garlic clove. Blend till smooth. Add chopped broccoli floweretes, cilantro, and parsley. Lastly, blend in Avocado with the lemon and brags. ~~~~~~~~~~~~~~~~ I often make a soup similar to above but I use Kale and celery instead of broccoli and add a couple of Tablespoons of Miso soup!! (Miso is another great addition to raw soups that adds flavor and protein.) I like adding garlic and ginger too... some cayenne is nice as well. Use your imagination. As you can see you can make a lot of varieties, and just use what ever you have in the fridge.. come up with your own variation and let me know your favorite!!! :) Have fun with it! ~K |
