Here are members' recipes that wowed potlucks:
Thuy's Hummus1 1/2 c. raw cashew pieces (soaked 30 mn)
1/2 c. pine nuts
4-5 Tbsp extra virgin olive oil
3 Tbsp nutritional yeast
1/4 c. lemon juice (to taste)
2/3 to 3/4 c. water
1/2 to 1 tsp salt (to taste)
1-2 cloves garlic (optional)
Mix all in Vita-Mix to desired consistency.
Experiment with amount of water for desired texture.
Experiment with amount of lemon juice & salt to taste.
(Diana's note: nutritional yeast is not raw - those striving to be 100% should avoid it.)
Diana's Extremely Easy Brownie Bites1 C. walnuts (unsoaked)
1 C. dates (unsoaked)
1/2 C. cacao powder or carob (I use 1/4 of each)
1 tsp. cinnamon
Combine in food processor until it's mixed but a bit chunky.
Press into a pan, refrigerate and cut or roll into balls.
This is also good rolled in grated coconut.
I don't remember where I got this recipe so I can't correctly attribute it. Just know that it's easy, people love it, and I've slightly adapted it. Have fun!
